Christmas morning is a flurry of gift-opening and greeting guests, so if you’re going to do a special meal, the only chance is to prep ahead. The ham-and-cheese bread pudding (strata, if you prefer), coffee cake, and homemade granola to top the tropical fruit salad can all be prepared a day or even two ahead. You can even slice the fruit for the salad the night before. When Christmas morning arrives, simply pop the bread pudding in the oven, put the fruit salad together, and make the special, spiced hot cocoa. It’s a gift to yourself and all of your guests.

Up to Two Days Ahead

  • Bake the coffee cake.

One Day Ahead

  • Assemble the bread pudding.
  • Make the quick coconut granola for the fruit salad. When it’s completely cool store in an airtight container.
  • Slice the pineapple, kiwi, and mango for the fruit salad and store in separate airtight containers.

In the Morning

  • Bake the bread pudding
  • Slice the banana and avocado and assemble the fruit salad.
  • Make the hot cocoa.
