A Simple and Quick Steak Dinner for Father’s Day

Perfect for Father’s Day or any day you want an easy dinner showing off a wonderful steak, this meal stars Pat La Frieda’s five-minute marinated skirt steak (so named because it can marinate for just five minutes, but here we give it a little longer while we’re prepping the other dishes). On the side are quickly blanched green beans in a tarragon dressing, and smashed fingerling potatoes with red wine vinegar and chives—a cross between mashed potatoes and a warm potato salad. End with a chocolate Dutch baby with raspberries and whipped cream, a dessert that’s just as spectacular as it is easy.

Menu Timeline

1 Hour Ahead

  • Marinate the steak.

45 Minutes Ahead

  • Make the vinaigrette for the green beans.
  • Prep the chives for the smashed potatoes.

30 Minutes Ahead

  • Heat the grill for the steak.
  • Cook and smash the potatoes and keep warm.

15 Minutes Ahead

  • Grill the steak.
  • While the steak rests, cook the green beans and toss with their vinaigrette.

After Dinner

  • Make the Dutch baby.
