This menu keeps things simple in terms of presentation–no fancy buffets or elaborate platings. But the three recipes are delicious, satisfying and will keep you going for much of the morning. And they’re easy to prepare without a lot of pre-planning. Start with a simple melon fruit salad in ginger syrup. The main event is open-faced ham-tomato-and-cheese sandwiches topped with fried eggs. Finish with what’s basically a blueberry muffin in cake form.

Menu Timeline

Up to 1 Day Ahead

  • Make and chill the ginger syrup.

90 Minutes Ahead

  • Make the blueberry muffin-cake.
  • Cut up the melon and toss with the ginger syrup.

20 Minutes Ahead

  • Make the ham-and-cheese melts, toss the arugula with dressing.

5 Minutes Ahead

  • Fry the eggs to top the sandwiches.
