Surprise mom with whole-wheat pancakes with strawberry sauce, extra-crisp bacon, and a mug of spicy chai.

This simple but special breakfast includes healthy whole-wheat pancakes with fresh strawberry sauce, bacon, and a mug of made-from-scratch chai.

Menu Timeline

30 minutes before breakfast:

  • Make the strawberry sauce. Allow to cool.

20 minutes before breakfast:

  • Begin heating a large nonstick griddle or skillet over medium-low heat.
  • Make the pancake batter.

10 minutes before breakfast:

  • Cook the pancakes. Keep them warm in a 200°F oven as you finish cooking the remaining ones.
  • Cook the bacon.
  • Start the chai, let it steep.

Just before serving:

  • Gently reheat the strawberry sauce until just warm.
  • Strain the chai and add the milk and sugar.
  • Plate the bacon and pancakes and dust with optional confectioner’s sugar.

Fresh Produce

  • 2 pints fresh strawberries or 4 cups frozen unsweetened strawberries
  • 1 small lemon

Meat, Eggs & Dairy

  • 1 cup lowfat buttermilk
  • 3/4 cup nonfat milk
  • 3/4 cup whole milk
  • 6-8 slices bacon
  • 2 large eggs

Other Groceries

  • 3/4 cup whole-grain pastry flour or whole-wheat flour
  • 1 Tbs. loose black tea, such as English Breakfast or Darjeeling
  • 6 green cardamom pods
  • 1 small cinnamon stick (about 1-1/2 inches long)
  • Confectioners’ sugar (optional)

Pantry Staples

  • 3/4 cup all-purpose flour
  • 2 Tbs. granulated sugar; more to taste
  • 2 Tbs. pure maple syrup
  • 1 Tbs. honey
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. pure vanilla extract
  • 5 cloves
  • Cooking spray
  • Table salt
  • Black peppercorns
