For the Super Bowl, or any big sports weekend,  prepare a spread of spectator-friendly finger food like Buffalo chicken strips, quesadillas, dips and chips. Follow our our make-ahead timeline and you won’t miss any game action.

Menu Timeline

Up to Two Days Ahead:

  • Assemble and refrigerate the black bean dip.
  • Make the blue cheese dip.

One Day Ahead:

  • Make bourbon marinade.
  • Cut the chicken into strips.
  • Add chicken to marinade, cover and refrigerate for 24 hours.

The Morning of the Big Game:

  • Bake and assemble the peanut butter & chocolate sandwich cookies.

90 Minutes Before the Game:

  • Assemble the quesadillas and refrigerate until ready to fry.
  • Cut up the celery, peppers, and cucumbers to serve with the buffalo chicken strips.

60 Minutes Before the Game:

  • Make the guacamole, press plastic wrap right up against the surface of the dip to keep it from turning brown.
  • Make the hot sauce mixture, keep warm.

45 Minutes Before the Game:

  • Put the black bean dip in the oven.
  • Dredge and fry the chicken.
  • When the bean dip comes out of the oven, toss the chicken with the hot sauce mixture and bake.

Just Before the Game:

  • Fry the quesadillas.

Shopping List

Fresh Produce:

  • 2 medium ripe avocados
  • 2 medium tomatoes
  • 2 colored bell peppers (oranges, red, or yellow)
  • 1 seedless cucumber
  • 1 celery heart
  • 1 medium lime
  • 1 large lemon
  • 1 large yellow onion
  • 1 bunch scallions
  • 1 bunch fresh flat-leaf parsley
  • 1 large bunch fresh cilantro
  • 1 bunch fresh dill
  • 1 jalapeño
  • 8-10 oz. fresh poblanos

Meat, Eggs & Dairy:

  • 2 lb. boneless, skinless chicken thighs
  • 8 very think slices Serrano ham, prosciutto, or other good cured ham
  • 1/4 cup sour cream
  • 13 Tbs. unsalted butter
  • 1/4 lb. Maytag Blue cheese
  • 1/2 lb. Mozzarella
  • 6 oz. sharp Cheddar cheese
  • 6 oz. Monterey Jack cheese
  • 2 large eggs

Pantry Staples:

  • 3 large cloves garlic
  • 2 Tbs. extra-virgin olive oil
  • 1 qt. vegetable oil
  • 5 Tbs. cider vinegar
  • 1/4 cup soy sauce
  • 1/2 cup mayonnaise
  • 3 cups unbleached all-purpose flour
  • 1-1/2 cup light brown sugar
  • 1 Tbs. cornstarch
  • 1 tsp. baking soda
  • 2 tsp. vanilla extract
  • 1/2 tsp. ground coriander
  • 1 Tbs. chili powder
  • Pinch ground cumin
  • Pinch cayenne
  • Kosher salt
  • Black Pepper

Other Groceries:

  • Tortilla chips
  • 8 small flour tortillas
  • 1/4 cup Crystal Hot Sauce (or other cayenne hot sauce such as Frank’s or Durkee but not a fiery sauce like Tabasco)
  • 2 15-1/2-oz. cans black beans
  • 1 can chipotles in adobo sauce
  • 1-1/2 cups frozen corn kernels
  • 1/4 cup bourbon
  • 2-1/2 cups smooth peanut butter
  • 10 oz. bittersweet chocolate
