This refreshing, veggie-centric summer picnic menu draws inspiration from all around the Mediterranean: green gazpacho from Spain, eggplant dip from Lebanon, pita pockets stuffed with Greek salad, and an Italian riff on tuna sandwiches. (Substitute high-quality tuna in olive oil if you want to skip the poaching step.) The dessert, rustic fig-and-raspberry crostatas, are Italian in name but might be found in the south of France as well.

One Day Ahead

  • Make the tuna salad.
  • Make the gazpacho.
  • Make the eggplant dip.

In the Morning

  • Assemble and bake the crostatas.
  • Make the tapenade.
