A Sweet-and-Savory Father’s Day Brunch

Brunch is the go-to meal for Mother’s Day, but Father’s Day? Not so much. And why not? In our experience, dads love a good pancake meal just as much as moms. Especially these pancakes, which boast great hearty texture from cornmeal and wheat germ, and are dressed in a smoky-sweet bacon-bourbon maple syrup. The rest of the brunch also celebrates Dad’s sweet AND salty side, with a fresh green salad dotted with herb-and-bacon-roasted peaches and creamy dressing, and salt-rimmed grapefruit-tequila cocktails to drink. This menu will serve 4 to 6, depending on how hearty the appetites are (the shopping list includes enough grapefruit juice and tequila for 4 cocktails).

Menu Timeline

Up to 1 Day Ahead

  • Make the bacon-infused maple syrup (but don’t add the bourbon); refrigerate overnight.
  • Make the sugar-roasted peaches; refrigerate in a covered container.
  • Toast the seeds and nuts for the salad. Cool completely, then store in a covered container.

 

First Thing in the Morning

  • Let the maple syrup and peaches come to room temperature
  • Wash and dry the greens for the salad.
  • If using whole grapefruits, squeeze the juice for the cocktails.

 

40 Minutes Ahead

  • Make the flapjacks; transfer to the oven as you cook them so they all stay warm.

 

Just Before Serving

  • Make the salad dressing and assemble the salad.
  • Make the cocktails.

Shopping List

Fresh Produce

  • 2 cups freshly squeezed red grapefruit juice or 3-4 red grapefruits
  • 4 ripe semi-firm medium peaches (about 8 oz. each)
  • 2 limes
  • 6 oz. (6 cups) mixed baby greens (such as arugula, red leaf, red oak, and butter lettuces)
  • 1 small bunch fresh mint
  • 1 small bunch fresh basil
  • 1 small bunch fresh chives
  • 1 small bunch fresh tarragon
  • 3 large sprigs fresh summer savory, thyme, or rosemary

Meat, Eggs & Dairy

  • 12 slices bacon (preferably thick-cut)
  • 2 large eggs
  • 1 cup whole or low-fat milk
  • 1 cup plain yogurt (regular or Greek, full-fat or low-fat)
  • 1/3 cup crème fraîche
  • Salted butter, for serving the pancakes

Other Groceries

  • 1 cup pure maple syrup
  • 8 oz. plata tequila
  • 1/4 cup wheat germ
  • 1 Tbs. bourbon (optional)
  • 2 Tbs. sunflower seeds
  • 2 tsp. pumpkin seeds
  • 2 tsp. pine nuts

Pantry Staples

  • 5-1/8 oz. (1-1/4 cups) all-purpose flour
  • 1/2 cup medium-grind yellow cornmeal
  • 1-1/2 Tbs. extra-virgin olive oil
  • 2-1/2 tsp. baking powder
  • 2 tsp. raw sugar, such as demerara or turbinado
  • 1/2 tsp. baking soda
  • Coarse sea salt
  • Kosher salt
  • Black peppercorns
