Thanksgiving Dinner with Mexican-Inspired Flavors

Give your Thanksgiving menu some Mexican spice with a pollo asado-style turkey: marinated in citrus, oregano, and achiote paste. When the turkey has this much flavor, the sides have to follow suit: a chorizo-spiked cornbread dressing, green beans with chipotle peppers, and a corn casserole inspired by elotes, beloved street food corn on the cob. Even the cranberry sauce has a bit of spice, as does the dessert, a chocolate cake with candied ancho peppers and pepitas.

  • Make the cake.
  • Make the cranberry sauce.

  • Spatchcock the turkey.

4 Hours Ahead

  • Prep the stuffing

3 Hours Ahead

  • Make the marinade and marinate the turkey.

2 Hours Ahead

  • Roast the turkey.
  • Make the chipotle butter for the green beans.

40 Minutes Ahead

  • Bake the stuffing and corn casserole.

20 Minutes Ahead

  • Remove the turkey from the oven and let rest.
  • Cook the green beans and toss with the chipotle butter.
