Apple Slaw with Poppyseed Dressing

This sweet twist on classic coleslaw is a perfect pairing for BBQ pork and ribs.

Ingredients

  • 3/4 cup mayonnaise
  • 3 Tbs. apple-cider vinegar
  • 1 Tbs. red-wine vinegar
  • 1 Tbs. honey
  • 1-1/4 tsp. poppyseeds
  • Kosher salt and freshly ground black pepper
  • 1/2 small red onion, very thinly sliced
  • 1 small head green cabbage, cut into 8 wedges, then thinly sliced crosswise (about 9 cups)
  • 1 lb. sweet red apples, such as Pink Lady, cut into matchsticks (about 3 cups)
  • 1/2 cup coarsely chopped fresh flat-leaf parsley

Preparation

  • In a large bowl, whisk together the mayonnaise, vinegars, honey, poppyseeds, 1/2 tsp. salt, and 1/4 tsp. pepper. Add the onion and stir to combine. Toss the cabbage, apples, and  parsley with the dressing. Season to tate with salt and pepper, and serve.
