Yield: Yields 2-1/4 cups.

This applesauce is great for garnishing or dipping potato latkes.


  • 5 or 6 cooking apples, such as McIntosh, peeled, cored, and cut into 1/2-inch pieces
  • 2 Tbs. water
  • 1/4 tsp. ground cinnamon
  • 1 tsp. pure vanilla extract
  • 2 Tbs. granulated sugar (optional)
  • Juice of 1/2 lemon

  • Put all the ingredients in a medium saucepan, cover, and set over low heat. Simmer until the apples are soft, 20 to 25 minutes. Mash with a fork until the mixture is a chunky purée. (Or pass through a food mill for a smoother texture.) Let cool.

    Delicious! The vanilla really kicks it up a notch. I used the sugar but next time might just use half of it.
