The ultimate no-cook summer meal, these stuffed avocados are refreshing and light but also deliciously satisfying. Round out the meal with a salad on the side.
Very easy and very good lunch. My husband loved it. We have tons of radishes in the garden right now so it was great to use them and the feta was really good in this too which was a surprise to me. I think what really makes it delicious though, is the chipotle creme that I made for this. I open a can of Chipole peppers and flash freeze them individually and then throw them in a plastic baggie in the freezer. I used 1 cup sour cream and used a hand blender to blend in a chipotle pepper! (or half yogurt or half mayo...) fabulous!
Is the corn to be cooked or raw?
For the effort - this salad is delicious. As another reviewer noted, from start to finish, including chopping, it takes 10 minutes to make and was quite tasty. Great use for leftover roast chicken, whether you roast yourself or pick up from Costco. I do think it needs a side dish or bread to make a truly satisfying dinner, but perfect for lunch.
