Basic Vinaigrette

Yield: Yields 5 to 6 Tbs.



  • 1/4 cup extra-virgin olive oil
  • 2 Tbs. minced shallot or 1 small clove garlic, mashed to a paste with a pinch of kosher salt
  • 1 Tbs. fresh lemon juice, balsamic vinegar, or red-wine vinegar; more to taste
  • Pinch kosher salt; more to taste
  • Pinch freshly ground black pepper or crushed red pepper flakes; more to taste


  • Whisk all the ingredients together in small bowl.
