There are three sizes of hard-shell clams: Chowder clams are the largest, then cherrystones, followed by littlenecks. Stick with cherrystones or littlenecks for these recipes because they’re small enough to eat whole in one bite.
Love, Love, Love this recipe! Made this several times and everyone wants more. I recommend using half the bread crumbs than it calls for as it over powers the clam. I'm thinking about using a little fresh minced garlic.
Made this twice and was a hit both times. Substituted pancetta for the bacon the second time. Still a favorite from my childhood.
