Coffee Banana Smoothie

Servings: 1

Don’t warm your leftover coffee in the microwave; save it for this easy afternoon pick-me-up. This smoothie is the perfect way to use cold coffee and have something sweet to get you to dinner.

  • 1 cup cold coffee
  • 1 cup frozen chopped banana (about 1 medium banana)
  • 1/2 cup whole milk
  • 1 Tbs. maple syrup

Put the coffee, banana, milk, and maple syrup in a blender. Start on low speed, and then increase to high; blend until smooth. Add milk as needed to thin the smoothie enough to blend.

Super tasty with leftover percolator coffee from this morning, but it didn’t come close to smoothie consistency starting with the coffee at room temp, even with using a frozen banana. I added a little ice. It was still very flavorful.

Sometimes I go through spells where I don’t tolerate dairy well. My plan is to sometimes substitute coconut milk, I’m a big fan of the banana-coconut combination anyway!

I've made this recipe in the past but instead of maple syrup i added 2 chopped dates and in place of whole milk I added almond milk. Same difference but dairy and sugar free. Yum!
