Medium-grain cornmeal gives these muffins a rustic texture. For a finer texture, use half fine cornmeal and half medium.
Taste fabulous!!! Is a voluminous recipe to say the least! And uses oodles of fats, but they really are quite good!
The batter seems very dry and thick. Is this normal?
