This simple and refreshing salad is a pleasing foil for the chicken paprikas.
I used one medium cucumber. I used only 1/2 TBS of dill oil. and 2 tsp red wine vinegar. Shorted the onions too. I took the seeds out of the cucumber. It was nice. I will make again.

3 Plum tomatoes
2 oz Ricotta cheese
0,5 oz Arugula
0,5 oz Basil
1 tbsp Extra Virgin Olive Oil
1 tbsp Balsamic glaze
1 pinch Sea salt
1 pinch Black Pepper
Wow...I just loved it!
Made with Chicken Paprikas. Used Vidalia onions. Someone asked for the recipe, so you know it was good. I was afraid I made it too far in advance, but the cucumbers were still crisp after 3 or 4 hours.
