Fresh Tomatillo Salsa

Yield: 1 cup

Ingredients

  • 1/2 lb. small fresh tomatillos (5 to 6), husked, rinsed, and quartered
  • 1 large clove garlic, crushed and peeled
  • 1/2 serrano, with seeds, coarsely chopped
  • 2 Tbs. chopped fresh cilantro
  • Kosher salt

Preparation

Purée the tomatillos, garlic, serrano, cilantro, 1/2 tsp. salt, and 2 Tbs. water in a blender until mostly smooth, about 1 minute, scraping down the blender as necessary. Season to taste with salt.
