Green Beans with Miso and Sesame Seeds

Savory miso butter adds quick umami flavor to simple roasted green beans. Serve alongside Steamed Sea Bass, topped with sesame seeds if you like, or serve with roast chicken or seared steak.


  • 1 Tbs. finely sliced scallions
  • 2 tsp. softened unsalted butter
  • 1 tsp. white miso
  • Freshly ground black pepper
  • 1 lb. trimmed green beans (not slender)
  • 1 Tbs. vegetable oil
  • Kosher salt

  • Position a rack in the center of the oven and heat to 475°F.
  • With a fork, mash the scallions with the butter, miso, and a pinch of pepper. Refrigerate.
  • Meanwhile, toss the green beans on a large rimmed baking sheet with the oil. Season with salt and pepper, and roast until tender and browned in spots, 12 to 14 minutes.
  • Transfer to a serving bowl, add the miso butter, and toss well.
