Grilling gives strawberries a slightly smoky flavor and a striking appearance. Balsamic vinegar adds a rich note that highlights and deepens the flavor of both the strawberries and the chicken, tying the meal together.
Flavorful and very easy! I used chicken cutlets that I had marinaded in olive oil Italian dressing in the refrigerator 10 hours. My cutlets were thick, so I cooked for 7 minutes per side. The strawberries were outrageously good. Overall, this was delicious. One mistake I made was to combine the oil and balsamic vinegar after the reduction. Stick with using them separately!
We made this as part of Make it Tonight. I will admit that I was unsure of the strawberries but it was fantastic. The kids loved it!
