These were great. I didn't have a grill so just used a pan to soften the eggplant. Only thing was a half an inch was too thick to roll so I just spread the feta mixture on top. Still tasted every bit as good! :)
these are wonderful and pretty easy to make. My husband does not like eggplant and he loved these.
Excellent, flavorful and easy! Perfect appetizer with a glass of chilled white wine.
