I love goat cheese so I loved this simple way of dressing up zucchini. I wouldn't use small zucchini again as I had trouble keeping the slices from sliding in between the openings of my grilling crate when turning. Larger zucchini is easier to handle in this recipe. The idea of rolling up grilled zucchini is nice and I plan to experiment with other fillings and spices.
