Servings: 2 (yields enough syrup for 32 drinks)

Look for pink guava juice to ensure that your martini has a lovely rosy glow.

  • 2 cups water
  • 2 cups granulated sugar
  • 6 dried ancho chiles
  • 4 oz. vodka
  • 1/2 oz. guava juice
  • 1 oz. fresh lime juice
  • 1 oz. dry vermouth
  • Superfine sugar
  • Ancho chile powder
  • Lime twist, for garnish

  • Combine the water, sugar, and chiles, and steep for 30 minutes. Strain and chill.
  • In a large shaker, combine the vodka, guava juice, 1 fl. oz. of the simple syrup, the lime juice, and vermouth. Add ice, then shake to chill. Strain into two chilled vodka glasses rimmed with a combination of superfine sugar and ancho chile powder.
