Holiday Sparkler

Yield: about 1-1/2 cups syrup (enough for 12 cocktails)

This blushing cocktail features Cinzano prosecco, extra-dry vermouth, and an intriguing grapefruit-thyme flavor profile. Need more festive cocktails? Check out the Bianco Refresher and Pom-Groni, also featured in this video.


For the grapefruit-thyme simple syrup

  • 1 cup sugar
  • 4 sprigs fresh thyme
  • 3 fresh grapefruit slices

For the cocktail

  • Cinzano Prosecco, chilled
  • 1.5 oz. Cinzano Extra-dry vermouth
  • 2 Tbs. Grapefruit-Thyme Simple Syrup
  • Grapefruit juice, chilled
  • Grapefruit slice and fresh sprig thyme, for garnish


Make the syrup

  • Combine all ingredients and 1 cup water in saucepan and bring to a gentle simmer. Simmer, stirring occasionally,
    until sugar has dissolved. Remove from heat; cool completely. Strain through fine sieve, using the back of a spoon to press and release juice from grapefruit.

Make the cocktail

  • Fill a 5 oz. coupe glass 3/4 full with Cinzano Prosecco. Add the Cinzano Extra Dry Vermouth, simple syrup, and a splash of grapefruit juice and stir to combine. Garnish with grapefruit slice and fresh thyme.
