This has great flavor and the meat was so tender. I will definitely make this again.
Hearty and filling-- more like a stew than a soup. The meat and barley were cooked perfectly. I added some diced rutabaga. Looking forward to re-heating the leftovers.
An instant favorite. Rich beef flavor- I thought using the beef base with the chicken broth was inspired- will try that with French onion soup.
The vegetables were cut into pieces that fit into a soup spoon- they were nicely cooked and not too soft.
The next time I think I will add a handful of crimini mushrooms, quartered, to the sautéing vegetables.
