Lime Leaf Pico de Gallo

Yield: 4 cups

Lime leaves have a strong citrus flavor, so a little goes a long way. Serve with an assortment of favorite chips like tortilla, taro, plantain, and potato.


  • 14 oz. tomatoes, cut into small dice (about 2 cups)
  • 1/2 cup small-dice red onion
  • 1/2 cup small-dice sweet onion
  • 1/2 cup small-dice green bell pepper
  • 1/2 cup small-dice orange bell pepper
  • 1/4 cup minced jalapeño; more to taste
  • 1/4 cup fresh lime juice (from about 2 limes)
  • 2 Tbs. extra-virgin olive oil
  • 1-1/2 Tbs. minced garlic (from about 6 large cloves)
  • 1 fresh lime leaf, center rib removed, minced to yield 1 tsp.
  • Kosher salt

  • Combine all the ingredients with 3/4 tsp. salt. Refrigerate for 1-1/2 to 2 hours before serving.
