Prepared this dish to accompany the Classic American Pot Roast (that I made without the potatoes), and both were terrific - the flavors matched up really well!I followed this recipe to letter, with the only exception being that I turned the oven off and let the potatoes sit for 30-45 minutes before removing the foil to brown the top. Because they didn't need much more cooking time, I just turned on the broiler and turned the pan once. Great do-ahead recipe!
