Made this with pre-cooked carnitas from Costco. Easy, tasty and a big hit with the family topped with crumbled up corn chips for crunch. Will definitely make again.

Excellent recipe for left over roast pork - chock full of flavours! Absolutely will be my 'go to' recipe from now on. We didn't find that the garnish of queso fresco necessary and will probably omit it next time. Make this recipe and you will be happy that you did!
