Pimento Cheese

Yield: Yields almost 2 cups

This recipe is excerpted from The Chefs Collaborative Cookbook.


  • 1-1/2 cups grated sharp Cheddar
  • 1/2 cup grated Gruyère
  • 2 Tbs. cream cheese
  • 3 Tbs. mayonnaise
  • 6 Tbs. finely chopped bread-and-butter pickles
  • 1/2 tsp. cayenne pepper
  • 1-1/2 tsp. Tabasco sauce
  • 7 Tbs. finely chopped pimentos
  • Kosher salt and freshly ground black pepper


  • Combine the Cheddar, Gruyère, and cream cheese in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed to combine, and then add the mayonnaise, pickles, and cayenne pepper. Mix for several rotations before adding the Tabasco and pimentos. Season to taste with salt and black pepper.
