I have never liked beets - until now! These are fabulous. I have made these with yellow and red beets. Always a party favorite, and I smile when guests ask, they are surprised or delighted to know they are enjoying beets. I usually cut in half and slice with a mandolin.
I don't like beets, but I love this recipe and so does my family. They're great by themselves or sliced and put in a salad.
