Roasted Radishes with Chive Butter

Servings: 2 to 4

Roasting radishes brings out their sweetness while still retaining crunch.


  • 1 lb. French breakfast radishes, trimmed and halved if large
  • 1 Tbs. olive oil
  • Kosher salt
  • 2 Tbs. softened unsalted butter
  • 1 Tbs. thinly sliced fresh chives
  • 2 tsp. whole-grain mustard

  • Heat the oven to 400°F.
  • Toss the radishes with the oil and 1/8 tsp. salt. Spread on a large rimmed baking sheet lined with foil, and roast for 20 minutes, or until tender and light golden.
  • Meanwhile, in a large bowl, mash together the butter, chives, and mustard.
  • Transfer the radishes to the bowl, and toss to coat in the butter mixture. Season to taste with a good pinch of salt, and serve hot.
