Major hit in our household. Will definitely make it again. I will add more spinach next time. Served with a simple side of angel hair pasta tossed with olive oil and lemon. Deglazed the scallop pan with white wine and added that to the pasta. Asparagus and fresh hot rolls and we had a perfect dinner that everyone raved about.
