A nice salad for a change of pace. Easy and not too time consuming and much of it can be prepped and cooked ahead of time.
This was delicious (I served it as part of the entire menu in this month's issue). I had the leftovers the next day - I love ginger, so I might increase the amount next time, but it was great riff on pasta salad.
