I served this at my Mother's 70th birthday cocktail party to rave reviews and many people asking for the recipe. I did not use mascarpone cheese (only because I did not have it), and cannot believe that it would add anything. I added a tiny splash of sweet mustard to the layer of filling just prior to rolling. This is my new "go to" recipe. I will absolutely be making this again very soon.
