Make Ahead Tips
This frittata is a great make-ahead dinner. Let it cool to room temperature and refrigerate until ready to serve. It can be warmed in the microwave or served at room temperature.

Absolutely delicious. Made this as written and will definitely make again. It's more substantial than the other frittatas I've made because of the fried potatoes. A keeper.
A great dish! I added leftover roasted broccoli florets and used asiago cheese rather than parm - Can't wait to enjoy this for the next couple days, delicious and easy breakfast. Mine made more like 6-8 servings.
I added mushrooms (pan fried to golden brown with the onions) and some cream to take the eggyness down a bit.It was delicious, and a big hit at the family brunch (15 out of 17 loved it!)
This frittata is always one of my "go-to" recipes when I want a light and easy dish for dinner. I sometimes swap small broccoli florets for the asparagus with equally good results.
