Spinach salad with strawberries and goat cheese is a classic starter that becomes vibrant and complex with the addition of fresh herbs. While tinkering with the proportions of herbs is encouraged, the tarragon can become overpowering if increased.
This is a great easy salad to put together in a flash. I used a combination of fresh spinach and swiss chard from my garden and fresh mint, basil and parsley from my garden as well. I think the next time I will combine balsamic and olive oil as the dressing.
When I looked in my frig tonight to make a salad to accompany dinner, all I had was spinach and strawberries. I knew Fine Cooking would have an excellent recipe for a classic salad like this. This is it! Thankfully, I had all the herbs in my garden, the goat cheese and the lemon too. Bonus- this was quick and easy. My husband complimented it. I say its a winner.
