Super Simple Cucumber Salad

Servings: 4

This salad is excellent served grilled kebabs or lamb, or with the roasted salmon with dill cream.


  • 3 Tbs. red wine vinegar
  • 2 Tbs. extra-virgin olive oil
  • 1 tsp. dried oregano
  • Kosher salt and freshly ground black pepper
  • 1-3/4 lb. cucumbers (3 medium or 10 small), peel, halved, seeded (if necessary), and thickly sliced
  • 1/2 red onion, thinly sliced
  • 1 scant Tbs. chopped fresh dill
  • 1/4 cup crumbled feta


  • In a large bowl, whisk together the red wine vinegar, olive oil, dried oregano, 1/2 tsp. salt and 1/4 tsp. pepper.
  • Add the cucumbers, onion, dill, and feta, and toss to coat. Just before serving, adjust the seasoning to taste with more salt and pepper.
