To serve, reheat the potatoes on medium-low power in the microwave or in a warm oven just until warmed through (be careful not to use too high a heat or the cream could separate), 3 to 4 minutes in the microwave, or about 10 minutes in the oven.
I wonder if instead of bringing it to room temperature before reheating if it could be put into a cold oven and reheated as the oven comes up to temperature so as not to break the sauce? I'll try it and report back.
These are spectacular and my go to sweet potato recipe at Thanksgiving. These do not rely on a bunch of added sugar for flavor. The potatoes are sweet enough already. The creams gives the dish a lovely texture and the horseradish provides a nice contrast to the sweetness. If you have someone who is not a horseradish fan they will still like these.
