Very tasty recipe and fairly easy. While you could use either parchment or foil, the parchment allows excess butter to leave the package which keeps it from being too heavy/rich tasting and lets the fish and curry flavor shine. We served it with a side spinach salad/ginger miso dressing, and the slight sweet note of the salad complemented the red curry quite well. This will definitely go into the regular rotation.
This is an incredibly easy and tasty recipe. Nice to do for entertaining, as all the work is done ahead of time. Any leftover curry butter has multiple uses.
