Watermelon Mojito

Servings: 2 (yields enough syrup for 16 drinks)

Nothing says summer more than watermelon. Added to your mojito, it takes refreshing to the next level.

Ingredients

  • 2 cups water
  • 2 cups granulated sugar
  • 1/2 cup fresh mint, chopped; more  for garnish
  • 2 oz. dark rum
  • 2 oz. watermelon juice
  • 1/2 oz. lime juice
  • Watermelon cubes, for garnish

Preparation

  • Combine the water, sugar, and mint, and steep for 30 minutes. Strain and chill.
  • Fill two highball glasses with ice. Divide the rum between the two glasses, followed by the watermelon juice, 2 oz. of the simple syrup, and the lime juice. Garnish each glass with a watermelon cube and mint sprig.
