Zesty Cranberries with a Bit of Spice

If you’re one to make that coveted ‘day-after sammy,’ there is nothing better than warmed biscuits sandwiched with a dollop of these cool cranberries, nestled in between the turkey, dressing, and warm gravy.

  • 16 oz. cranberries
  • 1 cup sugar
  • Zest of one grapefruit
  • 1/2 cup freshly squeezed grapefruit juice
  • 1 Tbs. minced jalapeño

In a medium saucepan, combine the cranberries, sugar, 1/2 cup water, grapefruit zest, and juice. Bring to a low boil. Reduce the heat and simmer, uncovered, until thickened, 30 to 35 minutes.

Transfer to a bowl, and let cool. Add the minced jalapeño, and fold into the cooled cranberries. Cover with plastic wrap, and store in the refrigerator for up to 3 days.
