Though we love dried porcini, the need to soak them takes away the spontaneity of cooking with them. Zingerman’s porcini powder, a fine grind of the dried mushrooms, is easy to add to simmering soups or sauces by the spoonful, and its aromatic, earthy flavor gives dishes a quick boost. We like adding a teaspoon of it to creamy pasta sauces or stirring it into a meat stew. $10 for a 59-gram jar at Zingerman’s.
